Bharwa Karela Masala
(Recipe)
Ingredients -
- 3 to 4 Medium size Karela (Bitter gourd)
- 2 to 3 Onions (roughly grinded)
- 1 spoon garlic paste
- 1/4 spoon black pepper
- 3 spoon fine mustard paste
- 1 spoon turmeric powder
- 1 spoon red chilli powder
- Salt as per taste
- Red chiili
- Raw Mango (1 spoon grinded)
- Panch Masala(Combination of mustard seed,cumin seen,ajwain seed,fennel seed and Methi seed)
- Mustard Oil /Any oil you prefer
- Kasuri Methi
Process -
Steaming
- Cut karela in two pieces
- Boil 1 glass water
- Add 1/2 spoon salt and turmeric
- Put Karela in it for 10 Minutes.After 10 minutes take out karela and let it cool.
- Once its cool,gently take the seed out of it,with butter knife,and create a empty pocket in it.
- Roughly grind all seed and keep it aside.
- Throw the water.Now the bitterness of karela is gone.
Masala Prepration
- Take a karahi and put 3 to 4 spoon mustard oil.
- Once the oil is hot add 1/3 spoon Panch Masala,red chilli and after few sec mustard paste ,turmeric,black pepper ,salt and red chilli powder,
- when masala is half fried add garlic paste,roughly grinded mustard seed which we took out from boiled karela.and raw mango pulp,you can add little tamarind if you dont have raw mango as sour cuts the bitterness of karela.
- Once Masala starts leaving oil in pan its done,let it cool down.
Shallow Fry
- Now fill the karela pockets with masala which we have prepared,just like we fill in Mirchi ka Achar.Use only half masala ,leave other half for gravy.
- Now take a pan ,and shallow fry them in mustard oil.
- Once it is golden brown all side looks cooked take them out and its ready to eat.
- It can be ate dry and with masala gravy.
Gravy Prepration
- You have to add some water and salt in the leftover masala and boil it as per the consistency you want.
- Usually the gravy is thick add some kasuri methi and boil for few minutes.
- Once the gravy is ready switch off the gas and gently add stuffed karela so that stuffing dont spill out.
- We dont need to boil it together as its already cooked.
- so our bharwa karela masala is ready.
